As summer is winding down I wanted to share a few of my favorite summer salads.  I am trying to squeeze in as many more summer recipes as I can.  This is our families favorite salad.  My husbands mom makes it every Memorial Day and Labor Day.  It is a classic and we love it!

Ingredients:

  • 1 package large macaroni noodles (I like to use wheat noodles instead and they are not the large ones)
  • 2 cans shrimp drained
  • 1 can diced olives
  • 1 cup frozen peas – more if desired
  • 1-2 cups cheddar cheese chopped into squares
  • 3/4 cup mayo – light or regular
  • salt and pepper to taste

Directions:

In a large pan cook and drain pasta according to package directions.  Let the pasta cool.  In a large bowl combine the mayo, salt and pepper together.  Then add the pasta, shrimp, olives, peas and cheddar cheese.  Taste and decide if you need more mayo, salt or pepper.  You want the salad to be creamy.  Put the salad in the fridge until ready to eat.
